Peach Fritters

  • Peaches
  • Powdered sugar
  • 3 egg yolks, beaten
  • 1/2 cup milk
  • 1/8 tsp salt
  • 4 ounces flour
  • For the sauce:
  • 1 ounce butter
  • 4 ounces sugar
  • 2 egg yolks, beaten
  • Dash of nutmeg
  • 1/2 cup rum
  • 1/2 cup cold water
Peel the peaches, split each in two and take out the stones. Dust a little powdered sugar over them. To make the batter, mix the rest of the ingredients together. Add a little more milk if necessary. Dip each piece in the batter and fry in hot oil.

To make the sauce, place the butter in a saucepan and whisk it to a cream. Add the sugar gradually. Add the nutmeg, cold water and rum to the beaten egg yolks. Stir into the lukewarm batter and allow to heat gradually. Stir constantly until of a smooth, creamy consistency. Serve with the peach fritters.
