Parker House Rolls

  • 2 cups scalded milk
  • 3 Tbsps butter
  • 2 Tbsps sugar
  • 11/4 tsp salt
  • 5 3/4 cups flour
  • 1 yeast cake, dissolved in 1/4 cup lukewarm water
Add butter, sugar and salt to the milk. When warm, add the dissolved yeast cake and 3 cups flour. Beat through and through. Cover and let it rise until light. Cut down and add enough flour to knead. Let it rise (rise up!) again. Toss on slightly flour-covered surface and knead. Pat and roll, roll, roll out to 1/3 of an inch in thickness. Shape with a biscuit cutter, first dipped in flour. Dip the handle of a case knife in flour and use this to make a crease through the middle of each piece. Brush over one half of each piece with melted butter, fold, and press the edges together. Place 1 inch apart in pan lined with butter. Cover and let it rise. Bake in a hot oven at 400°F for 12-15 minutes (be patient, you rascal).
