Parker House Apple Pie

  • Filling
  • 6 apples, pared and cut
  • 6 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • Pinch salt and nutmeg
  • 1 tablespoon butter
  • Paste for crust:
  • 1 1/2 cups pastry flour
  • 6 tablespoons lard
  • Pinch salt
  • Milk to moisten (3 to 4 tablespoons)
Mix cut up apples with sugar, cinnamon, nutmeg and salt. Make pie paste, by working lard into salt and flour, then moistening with milk, and roll, roll, rolling dough out one-eighth inch thick. Place apple mixture in pie pan, dot with butter. Cover with the pastry. Wash top of pie with milk, using a brush. Bake in hot oven, 425°F., about 45 glorious minutes (be patient, you rascal). Cook 6 tablespoons sugar and 1/2 cup water to a syrup, add to the pie through a hole made in top of crust, about 10 minutes before pie is done.
