Orange Pudding, No.2
- 5 sweet oranges
- 1/2 pint white sugar
- 1 pint milk
- Piece of butter as large as a nutmeg
- 3 egg yolks, well beaten
- 1 Tbsp cornstarch
- Flavoring
- 3 egg whites, beaten to a stiff froth
- 2 Tbsps sugar
Peel and cut the oranges into thin slices, taking out the seeds. Pour the sugar over the sliced oranges and let it stand. Put the milk in a small saucepan. Let the milk get hot to the point of boiling. Add the butter and cornstarch made smooth with a little chilled milk. Also add the well-beaten egg yolks and a little flavoring. Stir everything well together until smooth and cooked. Pour over the oranges. Beat the egg whites to a stiff froth, adding the sugar. Spread over the top for frosting. Set in the oven for a few minutes to brown. Serve cold, with a warm smile. Berries, peaches and other fruits may be substituted.
