Orange Pie
- Rind of 1 large orange, grated
- Juice of 2 large oranges
- 1 cup sugar
- 1 heaping Tbsp flour
- 3 egg yolks, well beaten
- 2 Tbsps butter, melted
- 3 egg whites, beaten
- 2 Tbsps sugar
- Juice of 1/2 lemon (optional)
Stir together the sugar and flour. Add the well-beaten egg yolks, melted butter, lemon juice and grated lemon rind. Put into a pie pan lined with pie paste. Bake in a quick oven at 400 degrees F. When it resembles a finely baked custard, spread on the top the beaten egg whites sweetened with 2 Tbsps sugar. Spread evenly and return to the oven to brown slightly. The addition of lemon juice improves the recipe.
