Orange Layer Cake

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs, separated
  • 1/4 tsp salt
  • 1/2 cup milk
  • 2 cups cake flour
  • 3 tsps baking powder
  • 1 tsp orange flavoring extract
  • Orange filling & icing:
  • 2 egg whites
  • 1 1/2 cups confectioners' sugar
  • Juice, rind & pulp of 1 orange
Cream the shortening. Add the sugar gradually and beat until light. Add the well-beaten egg yolks. Sift flour and measure. Add salt and baking powder. Add alternately with the milk to the first mixture. Beat vigorously and then fold in the stiffly beaten egg whites.

Bake in greased and papered layer cake tins in a oven heated to 350F at 350°F for 20-25 minutes (be patient, you rascal). Spread orange filling and icing between the layers and on top of the cake.

Orange filling & icing:
Whip the egg whites to a stiff froth. Add sugar, a little at a time. Beat in the pulp, orange juice and rind.
