Old Fashioned Dried Fruit Cake

  • 1 cup dried apples
  • 1 cup prunes, stoned
  • 1 cup molasses
  • 1/2 cup water
  • 1/2 cup shortening
  • 1 cup sugar
  • 2 cups currants
  • 3/4 cup raisins, seeded & quartered
  • 1/4 tsp baking soda, dissolved in 2 tsps water
  • Dry ingredients:
  • 2 cups flour
  • 1/4 tsp salt
  • 2 tsps baking powder
  • 2 tsps mixed spices, ground
Simmer the dried apples, stoned prunes, molasses and water together slowly. Let cool. Meanwhile, cream the shortening and sugar together. Add the currants, raisins and the cooked fruit into which the dissolved baking soda has been stirred. Add the dry ingredients sifted together. Mix through and through.

Turn into a cake pan which has been thoroughly greased and floured. Bake in a slow oven at 300°F for about 1 hour.

**This cake should be kept at least a month before being used.
