Morcan's Tartan Sauce

  • 1 spoonful dry mustard
  • 2 spoonfuls salt
  • Cayenne pepper
  • 1 egg yolk
  • 4 ounces oil
  • Vinegar
  • 2 small cucumber pickles, very finely chopped
  • 2 tsps capers, very finely chopped
  • 2 sprigs parsley, very finely chopped
  • 1 leek or small onion, very finely chopped
  • Celery, very finely chopped
Put the dry mustard, salt, a little cayenne pepper and egg yolk into a bowl. Mix these together.

Add, drop by drop, the oil. Stir constantly until a thick mass. Add a little vinegar.

Stir the chopped cucumber pickles, capers, parsley, leek or small onion and a little celery into the dressing.

This is delicious with boiled fish, hot or cold ---- also cold meat, chicken or turkey.
