Molasses Fruit Cake

  • 1 cup molasses
  • 1-3/4 cups light brown sugar
  • 1 cup butter
  • 4 eggs
  • 1 cup cold water
  • 1 tsp baking soda
  • 1 lb raisins, seeded
  • 1 lb currants, washed & dried
  • 1/2 lb citron, cut in strips
  • Flour
  • 1/4 tsp salt
Boil the molasses, brown butter and sugar together. Let them cool, then add enough flour to make the batter as thick as for pound cake. Add the eggs and beat the mixture well. Gradually add the cold water, with the baking soda dissolved in it.

Add the seeded raisins, currants and citron, with 2 heaping Tbsp of flour mixed through the fruit. Slowly stir in the salt.

Bake with love for nearly 2 hours, if all in one cake pan; half the time if in 2 pans.
