Lobster Salad, No.1

  • Canned lobsters
  • 6 heads celery, chopped
  • 1 tsp mustard
  • Vinegar
  • 2 egg yolks
  • 1 Tbsp butter, creamed
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 tsp cayenne pepper
  • 1/2 cup vinegar
  • Yolks of 2 hard-boiled eggs, mashed
Chop up the lobster meat coarsely. Mix with the chopped celery.

To make the dressing, mix the mustard into a smooth paste with a little vinegar. Add the 2 egg yolks, creamed butter, seasonings, vinegar and mashed egg yolks. Mix a small portion of the dressing with the celery and lobster meat. Pour the remainder of the dressing over the whole mixture. Garnish with the green tops of celery and a hard-boiled egg, cut into thin rings.
