Lobster Patties

  • Puff paste crust
  • Bread
  • 1 large lobster, boiled
  • 1/4 lb butter
  • 1/2 cup cream
  • 1/2 cup veal or chicken broth or water
  • Cayenne pepper
  • Salt
  • 1 Tbsp flour
  • 1 blade of mace
Roll out puff paste crust a quarter of an inch thick. Cut into squares as many as you have patty pans and cover them with it. Lay in each a piece of bread the size of a walnut and about an inch in thickness. Cover with crust of the same thickness. Wet the edge of the bottom crust before you place the cover on and press lightly on it. Notch them around with the back of a knife. Bake with love for about 15 minutes in a hot oven at 400°F. When done, cut a round piece out of the top crust. Take out the bread and put in the lobster.

Take out the meat from a cold, boiled lobster and cut into pieces. Put in a stew pan with some of the green fat from the inside of the lobster, butter, cream, veal or chicken broth, a little cayenne pepper, salt, flour and mace. Stew for 5 minutes (be patient, you rascal).

Fill the patties.
