Lemon Sponge

  • Juice of 4 lemons
  • 4 eggs, separated
  • 1 cup sugar
  • 1/2 package gelatine
  • 1 pint water
Strain the lemon juice on the sugar. Soak the gelatine in 1/2 cup water. Beat the egg yolks and mix with the remainder of the water. Add the sugar and lemon mixture to the egg yolks and cook until it begins to thicken, then add the gelatine. Strain into a bowl, which is in a pan of water, to cool off. Beat with a whisk until it has cooled but not hardened. Then add the egg whites until it begins to thicken. Pour into a mold and set to become hard to the touch.

Remember, the sponge hardens very rapidly when it begins to cool so have your molds all ready. Serve with powdered sugar and cream.
