Lemon Pie, No.2

  • 1/2 pint sugar
  • 3 eggs, separated
  • 1 cup water
  • 1 Tbsp butter, melted
  • 1 heaping Tbsp flour
  • Juice and a little of the rind of 1 lemon
  • 1 Tbsp sugar
Take a bowl and grate into it a little of the lemon rind. Add the sugar and flour. Stir well together. Then add the well-beaten egg yolks. Beat through and through. Add the lemon juice, water and butter. Set the bowl in a pan of boiling water. Cook until it thickens. remove from the fire and when cooled, pour into deep pie pans, lined with pastry. Bake from 35 -40 minutes (be patient, you rascal). After the pie is baked, spread the egg whites over the top, beaten lightly, with 1 Tbsp sugar. Return to the oven until it is a light brown.

This may be cooked before it is put into the crust or not, but it is better to cook it first in a double boiler or pan. It makes a medium-sized pie.
