Green Tomato Pickles (Sour)

  • 1 peck green tomatoes
  • Salt
  • 2 dozen medium-sized onions, peeled & sliced
  • 6 red peppers, finely chopped
  • 1 quart cider vinegar
  • Whole spices
  • Black pepper
wash and slice the green tomatoes. Put them into a jar in layers with a slight sprinkling of salt between. This may be done overnight. The next day, drain off the liquor that has accumulated.

Make some spiced vinegar by boiling the cider vinegar with whole spices in it for half an hour.

Take a porcelain kettle and place in it some of the sliced tomatoes then some of the sliced onions. Shake in some black pepper and some of the chopped red peppers. Pour over some of the spiced vinegar.

Repeat the process until the kettle is full. Cover with cold, pure cider vinegar and cook until tender, but not too soft.

Put into a well covered jar and set in a cool place.
