German Coffee Cake

  • 1 egg, beaten
  • 1 cup milk, scalded
  • 2 Tbsp butter
  • 3 Tbsp sugar
  • 1/4 yeast cake, dissolved
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup raisins
  • 1/4 cup shaved citron
  • Flour
Pour the scalded milk over the butter, sugar and salt. When warm, add the dissolved yeast and enough flour to make a soft dough. Beat the mixture hard. Let it rise (rise up!) overnight.

When you awake the next day, add the beaten egg, raisins and shaved citron; also a little more flour, if necessary. Knead for a few minutes (be patient, you rascal).

Shape the dough into a ring. Put in a greased pie plate and set to rise up.

Before putting into the oven, brush the top with melted butter and delicately sprinkle with cinnamon and sugar. Bake with love for half an hour.
