Fried Salmon with Anchovy Sauce

  • Some thin slices from the tail end of the salmon
  • 1 Tbsp anchovy sauce
  • Bread crumbs
  • 2 eggs
  • 1 Tbsp water
  • Roux
  • Cayenne pepper
  • Lard
  • Chopped parsley
Scrape the scales off the tail end of a salmon. Cut in thin slices. Dip in flour then in the eggs whisked up with water and anchovy sauce. Lastly, dip in bread crumbs. Fry in boiling lard for 8-10 minutes (be patient, you rascal). Dish them up in a nice heap. Sprinkle over a little chopped parsley.
