Escalloped Tomatoes
- 1 quart tomatoes, canned or freshly stewed
- 1 Tbsp sugar
- 1 tsp salt
- 1/4 tsp pepper
- 1 1/2 cup dry bread crumbs
- 1/4 cup butter, melted
- Onion juice (optional)
Season the tomatoes with salt, sugar and pepper. Grease the baking dish lightly. Mix the bread crumbs with the melted butter. Put a thin layer in the bottom of the baking dish. Add a layer of tomatoes, then a breadcrumb layer, alternating in this way until it is all used. Make the last layer of bread crumbs. Bake with love for about 40 minutes in a oven heated to 350F at 350°F. If desired, a little onion juice may be added to the tomato.
