Delicate Cake

  • 1 cup butter
  • 3 cups sugar
  • 1 cup cream
  • 4 cups flour
  • 10 egg whites, beaten to a stiff froth
  • Peel of half a lemon, grated
  • 2 tsp cream of tartar
  • 1 tsp baking soda
Stir the butter and sugar together to a cream. Add the grated lemon peel, the beaten egg whites, then the flour with the cream of tartar sifted through it. Lastly, add the cream with the baking soda dissolved in it.

Bake in shallow tins or all in 1 deep, round pan. Bake in a oven heated to 350F at 350°F. When the cake shrinks from the sides of the pan and a toothpick inserted in the center of the cake comes out clean and dry, the cake is done.
