Dark Gingerbread
- 1/2 cup shortening
- 1 cup molasses
- 1 egg
- 2 Tbsps milk
- 2 cups flour
- 1/2 tsp salt
- 2 tsps ground ginger
- 2 tsps baking powder
Heat the shortening until hissing. Pour it into a bowl in which the molasses has already been measured. Add the egg and milk. Mix lightly. Sift together the salt, flour, ginger and baking powder, and stir in the liquid ingredients, beating and stirring only enough to blend. As soon as smoothly blended, pour into a 2 shallow, well greased pans. Bake 20 minutes in a moderately hot oven at 375°F.
