Crab Gumbo

  • Large crab
  • Salt
  • Pepper
  • Dash of cayenne pepper
  • 1 good-sized onion, cut up
  • 3 Tbsps olive oil
  • 2 large tomatoes
  • 1 Tbsp green pepper, chopped
  • Slice of uncooked ham, diced
  • 1 quart boiling water
  • 20 pods okra, cut in inch length
  • Few drops Worcestershire sauce
  • 1/2 tsp kitchen bouquet
Clean and pick the meat from a large crab, taking care not to break the pieces too small. Sprinkle with salt, pepper and a dash of cayenne pepper. Fry the cut up onion in 2 Tbsps olive oil until the onion is tender. Add tomatoes, chopped green pepper and diced ham. Cover with boiling water. Add the okra and crab meat. Simmer until the okra is tender and the liquid is gelatinous. Stir in 1 Tbsp olive oil, a few small drops Worcestershire sauce and kitchen bouquet. Serve with boiled rice.

*Shrimp may be used instead of crab.
