Coconut Cake

  • 3/4 cup butter
  • 2 cups white sugar
  • 1 cup sweet milk
  • 4 eggs, separated
  • Lemon or vanilla flavoring
  • 3 heaping tsps baking powder
  • 3 cups flour, sifted
  • For the filling:
  • 3 egg whites
  • 1 cup powdered sugar
  • Coconut, grated
Cream the butter and white sugar together. Pour in the milk followed by the beaten egg yolks. Then add the beaten egg whites. Flavor with lemon or vanilla. Mix the baking powder into the sifted flour and add last. Bake in jelly pans.

For the filling, beat the egg whites and powdered sugar to a stiff froth. When the cake has cooled, spread a thick layer of the frosting over each cake. Sprinkle very thickly with grated coconut.
