Chocolate Cake, No.1

  • 1 cup butter
  • 2 cups sugar
  • 5 egg yolks, well beaten
  • 1 cup milk
  • 2 egg whites
  • 3 1/2 cups flour, sifted
  • 2 heaping tsps baking powder
  • For filling:
  • 3 egg whites
  • 2 cups sugar
  • 1/2 cake chocolate, grated
  • 1 tsp vanilla extract
Stir the butter and sugar to a cream. Add the egg yolks after they have been well-beaten. Slowly stir in the mlik. Beat the egg whites to a stiff froth. Add to the mixture. Lastly, add the sifted flour with the baking powder already stirred into it. Bake in jelly-cake tins.

To make the filling, take the egg whites and beat until very stiff. Boil the sugar to almost candy or until it becomes stringy or almost brittle. Take it hot from the fire and pour very slowly on the beaten egg whites, beating quite fast. Add the grated chocolate and vanilla extract. Stir it all until cool. Spread between each cake and over the top and sides. This, when well made, is the premium cake of its kind!
