Chocolate Blanc Mange

  • 1/2 box gelatine
  • 1 cup water
  • 1/2 cup chocolate, grated
  • 2 cups milk
  • 1 cup sugar
  • 3 egg whites, whipped
  • Vanilla
Soak both the gelatine in water and the chocolate, rubbed smooth in a small amount of milk, for about an hour. Boil 2 cups of milk and then add the gelatine and chocolate and sugar. Boil all together 8-10 minutes (be patient, you rascal). Remove from the fire and when nearly cold, beat into the mixture the egg whites, flavored with vanilla. Should be served cold with custard made of the egg yolks or sugar and cream. Set the molds in refrigerator.
