Chicken Pie

  • Chicken
  • 1 large spoonful lard
  • 1 onion
  • Parsley
  • Thyme
  • Sage
  • Black pepper
  • 1 cup boiling water
  • 1 cup cream
  • 1 spoonful butter
  • 2 yolks of hard boiled eggs
  • 1 nutmeg, grated
  • Spices
  • Paste
Cut up the chicken and pop it in the oven with a large spoonful of lard. Let it brown a little. Add the onion, parsley, thyme, sage and black pepper to taste. Pour on it a cup of boiling water, stir thoroughly and let it simmer until well cooked.

Just before removing from the fire, rub together the cream, butter, egg yolks, grated nutmeg and other spices to taste. Stir well. Pour in a pan lined with paste.
