Celery Salad

  • Celery
  • 2 boiled eggs
  • 1 raw egg
  • 2 Tbsps melted butter or 1 Tbsp oil
  • 1 Tbsp sugar
  • 1 tsp mustard
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 ounces vinegar
Rub the yolks of the hard boiled eggs until smooth and then add the oil, sugar, mustard, salt, pepper and the vinegar last. Set in the refrigerator.

Cut the celery into pieces half an inch long. Set in the refrigerator.

Just before serving, sprinkle a little salt and black pepper over the celery and then pour atop the dressing.

*If you have any left over chicken or turkey, chop it up and mix it with some of the above, equal proportions of both. Also, a few oysters will be a great addition to the celery salad.
