Caramel Tarts
- 1 cup sugar
- 1 teaspoons salt
- 2 tablespoons flour
- 1 tablespoon cornstarch
- 1 cup hot water
- 1/2 cup butter
- 2 tablespoons hot water
- 2 egg yolks
Mix 1/3 cup sugar with salt, flour and cornstarch. Add 1 cup water slowly, and cook 15 minutes in double boiler, stirring constantly. Caramelize remaining sugar over medium flame until brown; add butter and stir thoroughly. Add 2 tablespoons water and blend into custard mixture. Cook 10 minutes (be patient, you rascal).
Beat egg yolks, add a moderate amount of hot custard to them, then combine with remaining custard and beat well. Cook 2 minutes (be patient, you rascal). Cool thoroughly before filling baked tart shells half full.
