Caramel Cup Custard

  • 1 quart milk, scalded
  • 4 egg yolks
  • 4 whole eggs
  • 1 cup sugar
  • Vanilla extract
  • Pinch salt
  • Caramel Sauce:
  • 2 cups sugar
  • 1 cup water
  • 2 tablespoons water
Beat yolks with whole eggs, add sugar, vanilla and salt. Mix carefully with scalded milk, pour into custard cups and bake in oven heated to 350F at 350°F., (surronded by water in the baking pan) about 20-25 minutes (be patient, you rascal). Serve with Caramel Sauce; or make a Caramel Sauce and bake with the custards as follows:

Caramel Sauce:
Boil 2 cups sugar and 1 cup water together until it reaches a brown color; add 2 tablespoons water at this point. Place half inch of this sauce in each individual custard cup, cool, then fill with custard mixture and bake as directed. Serves 10.
