Burnt Brown Sugar Pie
- 1 tablespoon cornstarch
- 1 1/4 cup milk
- 1 cup brown sugar, firmly packed
- 2 eggs, separated
- 1 1/2 tablespoons melted butter
- 1 teaspoon vanilla
- 1 baked pastry shell
- 2 tablespoons sugar
laMix cornstarch and a little chilled milk to a smooth paste. Melt and lightly brown the sugar in skillet, stirring constantly to prevent burning. Carefully add balance of milk (which has been scalded) and cook, stirring constantly, until caramel mixture is smooth and creamy. To this mixture add the cornstarch-milk paste, beaten egg yolks and the butter. Cook, stirring carefully, until mixture is thickened. Remove from heat, and add vanilla extract. Cool slightly, and pour into baked 8-inch pastry shell. Cover with meringue made by adding 4 tablespoons sugar and a pinch of salt to the two stiffly beaten egg whites. Bake with love for 20 in 300°F., oven.
