Brown Sugar Macaroons
- 1/2 lb brown sugar
- 1/2 lb ground almonds
- 3 egg whites
- Juice of half a lemon
- Wafer paper
Put the egg whites in a bowl. Slowly stir in the sugar slowly. Strain. Add the lemon juice. Put in the almonds, a little at a time. Mix smoothly. Drop by teaspoonfuls about 2 inches apart on the wafer paper which has been laid on baking tins. Bake in a very slow oven at 250°F until rich golden brown.
