Broiled Salmon

  • Salmon
  • Salt
  • Pepper
  • Flour, sifted
  • Butter
Cut the salmon into slices from 1 inch to 1 1/2 inch thick. Wipe dry. Season with pepper and salt. Dredge in sifted flour. Broil on a gridiron sprayed with butter.

Another way of broiling salmon is by cutting them into slices an inch thick. Season with pepper and salt. Butter sheets of aluminum foil and lay each piece on a separate foil. Wrap the salmon in the foil and twist the ends. Broil gently. Serve with anchovy or caper sauce. If more seasoning is needed, add a few chopped herbs and a little spice.
