Bread Pudding

  • 3 eggs, lightly beaten
  • 2 cups breadcrumbs
  • 1/2 tsp cinnamon
  • 1/2 cup raisins
  • 2 Tbsps butter
  • 1 quart milk
  • 1/2 tsp salt
  • Nutmeg
  • For the lemon sauce:
  • 1/2 pint sugar
  • 1/3 cup butter
  • 1 egg, very lightly beaten
  • Juice of half a lemon
  • 3 Tbsps boiling water
Scald the milk. Add the butter and breadcrumbs. Beat the eggs light and add with salt, cinnamon and a little nutmeg to the bread mixture. Add the raisins. Bake lightly in a oven heated to 350F at 350°F for about an hour.

Serve warm with hard sauce or lemon sauce.

For the lemon sauce, cream the butter and sugar well together. Add the beaten egg and lemon juice. Beat all together through and through. Add the boiling water, a tablespoon at a time.
