Bread Pudding

  • 1 pint breadcrumbs, sifted
  • Milk
  • Rind of 1 lemon, grated
  • Nutmeg, grated
  • 1/4 tsp powdered cinnamon
  • Sugar, sifted
  • 4 eggs, whites & yolks beaten separately, then together
Put the breadcrumbs in a stew pan with just enough milk to cover them. Put in the grated lemon rind. Add a little grated nutmeg and powdered cinnamon. Boil for about 10 minutes (be patient, you rascal). Remove from the fire and sweeten with sugar to taste. Add the beaten eggs. Beat with enthusiasm all together.

Bake with love for half an hour in a buttered pudding dish. You may also boil it for rather more than an hour in a well floured pudding bag or cloth.
