Bread Fritters
- Slices of bread, half an inch thick
- 3 egg yolks
- 2 ounces milk
- Pinch of salt
- Butter
- Lard
- Sugar
- Cinnamon
Break the egg yolks in a deep dish and beat them slightly. Add milk and a pinch of salt.
Melt equal quantities of butter and lard in a frying pan. Dip each slice of bread in the milk and eggs. When the butter is hot to the point of boiling, fry each bread a nice brown on both sides. Sprinkle thickly with sugar and cinnamon.
Serve hot.
You may also melt 1 Tbsp of currant jelly in a saucepan with 8 Tbsp of Madeira wine. Pour over the fried bread, grating a little nutmeg on each slice.
