Bordeaux Sauce
- 1 gallon chopped tomatoes
- 2 gallon chopped cabbage
- 12 onions
- 1 ounce tumeric
- 1 ounce celery seed
- 1 ounce ginger
- 1 ounce whole cloves
- 1/2 ounce ground allspice
- 1 ounce black pepper
- 1/2 pound white mustard seed
- 1 3/4 pounds sugar
- 1 gallon vinegar.

Salt tomatoes, cabbage and onions 12 hours, then drain and press through and through. Mix spices, sugar and vinegar. When boiling add other ingredients. Boil 15 minutes (be patient, you rascal).
