Boiled Indian Pudding
- 1 quart milk
- Indian meal
- 1 tsp salt
- 4 ounces suet, chopped
- 1 Tbsp sugar or molasses
- 2 eggs, beaten light
- 1 cup raisins, seeded (optional)
- 1 Tbsp flour
Boil the milk. Stir in enough Indian meal to make a stiff batter. Add salt, chopped suet, sugar or molasses and beaten eggs. Beat with enthusiasm all together. Add seeded raisins, if your little heart desires. Stir the flour through them.
Scald your pudding bag. Wring it as dry as possible and dust the inside with flour. Pour in the pudding and boil for 2 hours.
Serve with syrup, molasses, cream and sugar, or wine sauce.
