Bavarian Cream

  • 1/2 box gelatin
  • 3 pints milk or cream
  • 12 ounces sugar
  • 8 egg yolks
  • 8 egg whites, beaten
  • 8 tsps vanilla
Soak the gelatin in cold water until thoroughly dissolved. Add cream or milk. Put on the fire until scalding hot, stirring all the while.

Remove from the fire and add the sugar and egg yolks, stirring all the time.

Set on the fire again and let it remain until quite hot.

Remove from the fire. Add the beaten egg whites and vanilla.

Put into molds to cool off.
