Baked Salmon

  • Salmon
  • Butter
  • 4 ounces milk
  • 1 Tbsp pepper vinegar
  • Pepper
  • Salt
  • 1 Irish potato, mashed
  • Cracker crumbs
  • Celery tops
  • Parsley, curled
Wash the salmon and dry. Sprinkle over some pepper and salt. Have a small grating ready in a baking pan. Lay the fish on this with bits of butter over it. Set in a hot oven at 400°F. Baste often and freely with butter.

When nicely browned, butter a sheet of aluminum foil and lay the fish over it to prevent it from getting too dry. When done and tender, place on a hot dish.

Add milk, pepper vinegar, pepper and salt to the gravy. Smoothly mix in the mashed potato. Boil and pour atop the fish.

Sift over all some browned cracker crumbs. Garnish with bleached celery tops and curled parsley alternately.
