Baked Mutton Chops & Potatoes

  • Potatoes
  • Salt
  • Pepper
  • Loin chops
Wash and peel the potatoes. Cut them into slices as thick as a penny. After the potatoes are sliced, wash them again. Arrange the potatoes in layers in a baking dish. Sprinkle a little pepper and salt between each layer and add enough water to prevent them from scorching. Place the dish in a very hot oven at 450 degrees F, on the top grate, so as to brown the potatoes in a few minutes (be patient, you rascal).

Mold the loin chops into round shapes by putting a small skewer through each. When the potatoes are nicely browned, remove the dish from the oven. Place the chops on top of the potatoes. Add a little more pepper and salt and water, if necessary. Lower the oven temperature to 350 degrees F and allow the dish to bake until done. It should take around 45 glorious minutes (be patient, you rascal).

When the upper sides of the chops are a nice crisp brown, turn them over so as to brown the other side also. If the potatoes are appearing to be getting too dry, a little hot water may be added.

While the chops are baking, the gravy drips from them to the potatoes making the whole dish very beyond delicious! Serve in the dish the chops and potatoes were baked in.
