Baked Ham & Veal

  • 3 lbs veal, finely chopped
  • 2 lbs lean pork, finely chopped
  • 10 crackers, finely rolled & sifted
  • 1 Tbsp parsley, chopped
  • 1 Tbsp thyme, dried & rubbed or chopped
  • 1 Tbsp summer savory
  • 3 ounces butter, melted
  • Salt
  • Pepper
  • 1 small onion, chopped
  • 6 eggs, beaten
Mix the chopped veal and pork, rolled crackers, chopped parsley, thyme and summer savory together. Pour over the melted butter and mix all well together. Add pepper and salt to taste and the chopped onion. Slowly stir in the beaten eggs.

Bake in a sizeable bowl, packed as closely as possible. Bake slowly at 300°F for about an hour and a half.

When cold, cut in thin slices. Garnish with parsley.
