Applelicious Bread
- 4 cups baking apples, peeled an diced
- 1 cup finely chopped pecans
- 2 cups sugar
- 3 cups all-purpose flour
- 2 tsps baking soda
- 1/4 tsp salt
- 1 tsp ground allspice
- 1 tsp ground cinnamon
- 2 sticks (1/2 lb) butter, melted
- 2 eggs, slightly beaten
- 2 tsps vanilla extract
Preheat the oven to 325 degrees F. Butter and flour two 9-inch loaf pans.
In a large bowl, combine the apples, pecans, and sugar and stir well. Mix the flour with the soda, salt, spices, and butter; add to the apple mixture. Combine the eggs and vanilla and add to the batter. Mix well. Pour into the prepared pans. Bake for 1 hour, or until a wooden pick inserted near the center of the loaf comes out clean. Cool in the pans 10 minutes; then turn out onto a rack. Makes 2 loaves.
For a single loaf, make 1/2 the recipe above.
