Apple Tapioca
- 1 cup tapioca
- 1 quart water
- 4-5 Tbsp sugar
- Apples, pared & cored
- Lemon, sliced (optional)
Soak the tapioca in 1 quart of water overnight.
When you awake the next day, put on the stove in the water it was soaked in. Boil until like jelly. Add boiling water as it thickens, until it will run from the spoon. Add 4-5 Tbsp of sugar.
Pare and core whole as many apples as will nearly fill your dish.
Make a syrup of sugar and water. Boil the apples in it until clear. Take the apples out and drain all the juice from them. You may slice a lemon and add to the apples a few minutes before you take them out. Lay in a dish and pour the tapioca over them. Set away until cold.
Serve with or without cream.
