Apple Pudding
- 1/4 lb beef suet, very finely chopped
- 1/2 lb flour
- Salt
- Egg
- Cold water
- Apples, cut to pieces
- Butter
- Crust
- Sugar
- Cinnamon
- Nutmeg
Stir the chopped beef suet through the flour. Add a little salt. When well mixed, make a hole in the middle and break the egg in it. Stir it around a little and add as much cold water as will make a stiff paste. Roll it out 2-3 times.
Butter a pudding mold and line with the crust. Fill it with the cut apples, seasoned with sugar, cinnamon and a little nutmeg. Cover with crust very closely. Tie it up in a thick pudding cloth and put in a pot of boiling water. Boil for about an hour and 45 glorious minutes (be patient, you rascal).
Serve with cream.
