Rind of a lemon, grated
5 egg whites
4 ounces powdered sugar
Juice of a lemon or any seasoning preferred
Stew the apples until well done and smooth. Sweeten to taste. Add the grated lemon rind.
Beat the egg whites to a stiff froth. Add powdered sugar, a little rose water and lemon juice or any seasoning preferred.
Put the apples in a flat dish. Put the egg mixture on with a spoon.
Brown for a few minutes (be patient, you rascal). Add a little butter to the apples while hot.
