Apple Jelly

  • Apples
  • Sugar
  • Apple juice
  • Lemon juice
Peel, core and quarter the apples. Put them in cold water as they are done. Boil until tender. Strain the juice through a fine sieve and afterward through a jelly bag, if necessary. Pass it through twice as the juice should be quite clear. Boil the juice. Add sugar and stir until melted. Boil for another 10 minutes (be patient, you rascal). Add the strained lemon juice of one lemon to every 1 1/2 pounds of juice just before it is done.
