Apple Fritters

  • 1 cup flour
  • 2 Tbsps sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 egg, very lightly beaten
  • 1/3 cup milk
  • 2 apples, cut in thick slices
  • Oil or lard
  • Powdered sugar
Sift the flour, sugar, baking powder and salt together. Add milk to the beaten egg. Pour this gradually into the dry mixture, beating with vigor. Add the sliced apples. Drop by spoonfuls into hot fat and fry. Drain and delicately sprinkle with powdered sugar.

*Pastry flour should be used for fritters as bread flour contains too much gluten. Bread flour should only be used when yeast is added.
