Apple Custard Pie, No.1

  • 3 cups milk
  • 4 eggs, separated
  • 1 cup sugar
  • 2 cups apples, stewed
  • Nutmeg
Strain the stewed apples through a colander. Beat separately the egg whites and egg yolks lightly. Mix the egg yolks well with the apples, flavoring with nutmeg. Beat into this the milk and, lastly, the egg whites. Let the crust partly bake before putting in the filling. Bake with only the one crust, like all custard pies.
