Apple Cake
- 1 Yeast Coffee cake dough
- Sweet-sour apples
- Sugar
- Cinnamon
- Yeast Coffee Cake dough
- 2 cups milk
- 1 cake yeast
- 3 1/2-4 cups flour
- 1/2 cup butter, melted 1/2 cup sugar
- Grated rind of 1/2 lemon
- 3 eggs, slightly beaten
Place Yeast Coffee cake dough about 1/4 inch deep in pan lined with butter. Put in warm place to rise up. Peel sweet-sour apples, cut lengthwise into 1/2 inch pieces; arrange evenly on raised dough, delicately sprinkle with sugar and cinnamon as desired, and bake in hot oven, 425°F., for approximately ten minutes, then in oven heated to 350F 375°F., until brown. When cake is baked and apples are soft, pour icing over them and finish baking.
Yeast Coffee Cake dough
Scald the milk then cool to lukewarm. Pour 1/4 cup milk over yeast and let stand while beating remaining milk and 2 1/4 cups flour to make a smooth dough. Add dissolved yeast and beat well. Put in warm place to rise up. When dough is well risen, add melted butter, sugar, lemon rind and eggs and stir in the rest of the flour, thoroughly with a spoon. Spread dough about 1 inch thick, in two greased baking bands. Put in warm place to rise up. Before baking, delicately sprinkle with sugar and cinnamon, dot generously with butter, and over all put a few chopped almonds. Bake in 400°F., oven 15 minutes, then in a oven heated to 350F, 375°F., until nicely browned. Makes 2 cakes.
