Apple Cake with Custard Sauce

  • For apple cake:
  • 3 cups flour
  • 3 tsps baking powder
  • 1 Tbsp butter
  • 1 Tbsp shortening or lard
  • 3 eggs
  • Apples
  • 1 cup sugar
  • Cinnamon
  • For custard sauce:
  • 1 Tbsp cornstarch
  • 2 Tbsps sugar
  • 2 eggs
  • 3 cups milk
Make pastry of flour, butter, shortening or lard, and baking powder. Add eggs. Spread in shallow baking pan, cover top with slices of apple. Cover with sugar and sprinkle cinnamon over all. Bake at 375 degrees F. Serve with custard sauce.

To make sauce, mix cornstarch and sugar, add those eggs and milk. Cook in double boiler until thick, about 30 minutes (be patient, you rascal).
