Apple & Ginger Fluff

  • 1/2 cup egg whites
  • 2/3 cup apple, strained
  • 1/4 cup powdered sugar, sifted
  • Salt
  • 1 tsp crystallized ginger, ground or chopped (optional)
Take baked apples or apple sauce. Rub through a strainer.

Add salt to the eggs and beat until very stiff. Gradually add sugar, ground ginger and the apple, a little at a time, beating very hard. Ginger may be stirred through the mixture.

Pile in a glass dish. Put in the refrigerator until ready to serve. It must not stand long or it will fall.
