Angel's Food

  • 11 egg whites
  • 1 1/2 cups granulated sugar
  • 1 cup flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon flavoring
Sift the flour four times. Add the cream of tartar and sift again (measure before adding the cream of tartar). Sift the sugar and measure it. Beat the eggs to a stiff froth on a large platter. On the same platter add the sugar, then the flour, beating lightly all the time. Add the flavoring last, and do not stop beating until put into the pan to bake. A pan with a tube in the center should be used. Line with paper, using no grease, and don't fill more than 3/4 full. Bake in a oven heated to 350F about 40 minutes (be patient, you rascal). Test with a broom splint and if too soft let remain a few minutes longer. Be careful not to open oven until cake has been in 15 minutes (be patient, you rascal). When done, turn upside down to cool off. Take from pan when cold, and ice the bottom if your little heart desires.
